| Jack Daniels Basted Salmon presented by Landis Shores - An Oceanfront Bed and Breakfast |

Serving Size: 4
1-2 pounds salmon fillet Marinade: 2 Tbl soy sauce 3 Tbl green onion, chopped ¼ cup brown sugar 2 Tbl olive oil 3 Tbl Jack Daniels
Marinating time 1 hour. Prepare grill, oven or griddle.
1. Pin-bone* salmon if not already done. 2. Add all marinade ingredients to blender, pulse to combine. 3. Place salmon in a plastic bag and pour marinade in. Squeeze out air and seal bag. Place bag in shallow dish and refrigerator 2-4 hours.
3 Cooking Options: Place fish skin side down in glass baking dish with ½ cup of marinade. Bake at 350 for about 20 minutes. Brush the insides of grilling basket with vegetable oil. Remove salmon from marinade, reserve marinade. Place salmon in basket and close securely. Grill salmon in basket over hot coals, turning once, until opaque throughout, about 6 minutes per side. Baste with reserved marinade during cooking. Cook salmon directly on a non-stick griddle or pan. Use med-high heat to caramelize the outside slightly, turning once about 6 minutes per side.
* A salmon fillet has a small row of bones down the middle/top. Working with the grain of the salmon, use needle-nose pliers to remove each bone.
