| Goat Cheese Popovers presented by White Rocks Inn Bed and Breakfast |

Vegetable oil for greasing tins
4 oz herbed chevre (goat) cheese
6 eggs
1 ½ cups all purpose flour
1 teaspoon salt
½ teaspoon black pepper
pinch of nutmeg
2 cups milk
½ cup heavy cream
Preheat oven to 400 degrees.
Cut cheese into 12 or 24 pieces, depending on size pan used
Prepare pans for 12 large or 24 mini-popovers
Brush popover pans with oil and place in oven to get hot
Place eggs, flour, salt, pepper and nutmeg in blender and blend about 10 seconds until well combined. Scrape down sides.
With blender running, slowly pour in milk and cream and blend until smooth.
Remove pans from oven and fill each half way with batter. Place a piece of cheese in the center of each cup and pour remaining batter to till each cup 2/3 full.
Bake popovers until puffed and golden, 35-45 minutes. Serve hot.
